This happened a while ago. Just never got around posting it. Life has been a bit hectic lately that I haven't get the chance to just sit and write.
Anyway, usually, when my craving for cupcakes revisit, I will start browsing for a new recipe, do some shopping and my favorite baking shop, go home, sort the stuff then start baking. So, there I was, settling on a Snickerdoodles cupcakes recipe. Mostly because I have most of the ingredients ready at home.
Everything went on smoothly and I was lost in my own world where I'm the best baker in town and everybody LOOoove my baking goods that they keep coming for more. Haha!
Then disaster happened. I misread the recipe. I got everything right except one little tiny detail. And that little tiny detail turned my cupcake's world upside-down.

The recipe called for 1/4 teaspoon of almond extract. And I put in a whole teaspoon. Just as soon as I beat the extract in the batter, my previously perfect batter, I felt the need to double check the recipe.. If only I'd double or triple check it before I pour in the damn thing.. Oiy~
I tried to assure myself that the it wouldn't make much of a different. After all, it was only a little over 3/4 of a teaspoon more than required.. Right? Wrong!
Once these cute little cupcakes, I had them cooled for a while. Then I pickup up one to taste. And right there and then, I felt like crying.
The texture was perfect! It was soft and moist but fluffy at the same time. It was amazing! But the taste.. Oh my.. It tasted like children antibiotic drop. Not good. Really not good.
I proceed to make the frosting anyway, hoping that the cinnamon buttercream would mask the horrible taste. The buttercream, also, turned out perfect and delicious. My sisters used the leftover buttercream to spread on her toast. But did it help with the cake's antibiotic taste? Nope. The almond extract was waaaay to strong, nothing could hold the thing down. It smells fantastic though.
At the end of the day, no body wants to finish the cupcakes. Poor little sweet thing.. I fed the cakes to stray dog that keeps pacing in front of our trash bins. He thought it was his birthday, I guess. He gobbled it all up. Oh well, at least they didn't go to waste.
